This crockpot freezer chili is the dump meal we make most. Twenty-five minutes of prep fills two gallon bags, each one a full dinner for a family. On the day, you thaw a bag overnight, tip it into the slow cooker in the morning, and come home to a thick, beefy chili that tastes like it simmered all day, because it did.

Plenty of dump-meal chilis go into the bag with raw ground beef. We brown the beef first, and it is worth the extra ten minutes: the chili tastes deeper, you can drain away the fat before it ends up floating on top, and the meat is already cooked, which makes the whole meal more forgiving. The beans, tomatoes and spices go in straight from the can and jar.

We tested this freezer chili cooked from thawed and from frozen, on low and on high, and with and without browning the beef, to find the method below. Food-safety guidance from the USDA is to thaw frozen meat before it goes into a slow cooker, so this recipe thaws overnight in the fridge; if you forget, there is a stovetop method that cooks it from frozen. For more ways to fill your freezer in one afternoon, see our freezer dinner starter pack.

Why You’ll Love This Crockpot Freezer Chili

  • Two dinners from one prep. One batch fills two gallon bags of five servings each.
  • Truly hands-off. Thaw, tip into the crockpot, walk away for 6 to 8 hours.
  • Deep, slow-simmered flavour. Browned beef and a full day in the slow cooker make a rich, thick chili.
  • Freezes flat. Bags stack like files and thaw evenly overnight.
  • Gluten free and dairy free. Add cheese and sour cream at the table if you like.

Should You Brown the Beef Before Freezing Crockpot Chili?

Yes. You can put raw ground beef in a chili dump bag, but browning it first is better in every way. It adds the caramelized, meaty flavour that a slow cooker cannot create on its own, it lets you drain off the fat so the finished chili is not greasy, and it means the meat is fully cooked before it goes in the bag. Browned beef also cooks into tender crumbles, while raw beef simmered in sauce tends to clump into grey lumps.

The one rule after browning: let the beef cool for 20 minutes before it goes into the bags with the other ingredients. Warm meat in a sealed bag raises the temperature of everything else and slows freezing. And never put the frozen bag straight into the slow cooker: a slow cooker heats too gently to bring a frozen block safely through the danger zone, so thaw it in the fridge overnight first.

Key Ingredients for Hearty Crockpot Freezer Chili

Everything except the beef comes from the pantry, which makes this crockpot freezer chili easy to stock up for. Here is what each ingredient does:

  • Ground beef: 85 percent lean gives the best flavour; you drain off the extra fat after browning.
  • Kidney and black beans: Two kinds for texture. They go in drained and rinsed and hold their shape through freezing and a long cook.
  • Diced tomatoes and tomato sauce: The base of the chili. Tomato sauce gives body so the chili is thick, not watery.
  • Onion, bell pepper and garlic: Cooked with the beef so they soften and sweeten before freezing.
  • Chili powder, cumin, oregano and smoked paprika: A classic, family-friendly blend. Add cayenne or chipotle powder for heat.
  • Beef broth: Added on cooking day, not in the bag, so the frozen bags stay compact.

How to Make Crockpot Freezer Chili

The full recipe with exact amounts is in the card below. Here is the method at a glance:

  1. Brown the beef. Cook the beef with the onion, pepper and garlic until browned, drain the fat and cool for 20 minutes.
  2. Fill two bags. Divide the beef, beans, tomatoes, sauce and spices between two gallon freezer bags.
  3. Freeze flat. Squeeze out the air, seal, label and freeze the bags flat on a sheet pan.
  4. Thaw and slow cook. Thaw a bag in the fridge overnight, tip it into the crockpot with the broth and cook on low for 6 to 8 hours.

How to Tell When Slow Cooker Chili Is Ready

The chili is ready when it is bubbling gently at the edges, thick enough to mound on a spoon, and 165°F (74°C) in the centre. The beans should be soft and the flavours blended; if it tastes a little flat, a pinch of salt or a squeeze of lime brings it back to life.

If the chili is thinner than you like at the end of cooking, take the lid off and cook on high for 30 minutes. If it is too thick, stir in a splash more broth.

How to Freeze, Thaw and Reheat Crockpot Freezer Chili

The bags freeze uncooked, except for the browned beef, and cook once in the slow cooker. Cooked leftovers also freeze well: cool them, portion into containers and use within 3 months.

Thaw overnight in the fridge (about 24 hours) before slow cooking. Do not slow cook from frozen.

To freeze

  1. Brown the beef with the vegetables, drain the fat and cool it for 20 minutes.
  2. Divide everything between two gallon bags, without the broth.
  3. Press out the air, seal and label with the date and cooking directions.
  4. Freeze flat on a sheet pan, then stand the bags up like files.

To reheat

Slow cooker, thawed
Add 1/2 cup broth and cook covered on low for 6 to 8 hours or high for 3 to 4 hours, to 165°F (74°C).
Stovetop, from frozen
Run the bag under warm water to loosen the block, put it in a Dutch oven with 1/2 cup broth, cover and cook over medium-low, stirring as it thaws, then simmer 30 minutes to 165°F (74°C).
Cooked leftovers
Reheat portions on the stove or in the microwave, stirring, until steaming hot.

From frozen: On the stovetop only (about 1 hour). A slow cooker heats too slowly to start from frozen.

Crockpot Freezer Chili FAQ

Can you put frozen chili in the crockpot?

It is not recommended. The USDA advises thawing frozen food before slow cooking, because a slow cooker heats too gently to bring a frozen block safely out of the danger zone. Thaw the bag in the fridge overnight, or cook it from frozen on the stovetop instead (see the freezer instructions).

Can you use frozen ground beef in crockpot chili?

Thaw it first. Frozen ground beef should not go straight into a slow cooker. Thaw it in the fridge, brown it in a skillet, then add it to the crockpot or the freezer bag.

Can you freeze chili with beans?

Yes. Canned kidney, black and pinto beans all freeze well in chili and keep their shape through a long slow cook. Rinse and drain them before they go in the bag.

Can you freeze chili in mason jars?

Yes, for cooked chili. Use wide-mouth, freezer-safe glass jars, cool the chili completely and leave at least 1 inch of space at the top for it to expand. For uncooked dump-meal chili, flat freezer bags are easier.

Method

  1. Brown the beef in the oil in a large skillet over medium-high heat for 6 to 8 minutes, breaking it up. Add the onion and pepper and cook 5 minutes, then the garlic for 1 minute. Drain the fat and let the mixture cool for 20 minutes.

  2. Divide the cooled beef, kidney beans, black beans, diced tomatoes, tomato sauce and all the spices evenly between two gallon freezer bags.

  3. Seal each bag, pressing out as much air as possible, and squish gently to mix. Label with the date and cooking directions, lay flat on a sheet pan and freeze for up to 3 months.

  4. Thaw one bag in the fridge overnight (about 24 hours), sitting in a bowl to catch any drips.

  5. Cook the thawed chili in a 6-quart slow cooker with the broth, covered, on low for 6 to 8 hours or high for 3 to 4 hours, until thick and 165°F (74°C) in the centre. Taste and adjust the salt.

  6. Serve topped with cheddar, sour cream and green onions, with cornbread or tortilla chips on the side.

Freezer instructions

  • Freeze: Gallon freezer bags, frozen flat, up to 3 months.
  • Thaw: Thaw overnight in the fridge (about 24 hours) before slow cooking. Do not slow cook from frozen.
  • Reheat (slow cooker, thawed): Add 1/2 cup broth and cook covered on low for 6 to 8 hours or high for 3 to 4 hours, to 165°F (74°C).
  • Reheat (stovetop, from frozen): Run the bag under warm water to loosen the block, put it in a Dutch oven with 1/2 cup broth, cover and cook over medium-low, stirring as it thaws, then simmer 30 minutes to 165°F (74°C).
  • Reheat (cooked leftovers): Reheat portions on the stove or in the microwave, stirring, until steaming hot.
  • From frozen: On the stovetop only (about 1 hour). A slow cooker heats too slowly to start from frozen.

Notes

  • Spice level: As written it is mild. For heat, add 1/2 teaspoon cayenne or 1 to 2 teaspoons chipotle powder per bag.
  • Ground turkey: Use the same weight of ground turkey and add 1 tablespoon of olive oil when browning.
  • Instant Pot: Cook a thawed bag with the broth on high pressure for 15 minutes, with a 10-minute natural release.
  • Toppings: For a dairy-free bowl, top with avocado, cilantro and lime instead of cheese and sour cream.
